Easy, Everyday Superfood Salad Recipe

What’s up everyone! When I asked those of you who follow me on Instagram what type of content you’d like to see more of on the blog, a lot of you said health/food content. Back in the summer of 2017 when I first started my blog, I shared a few great recipes (the fish taco one was a big hit) and I definitely want to continue to post about food. I will say though that sometimes it’s easier to do quick snippets here and there on my Instagram story… Be sure to follow me there so you don’t miss those!

Today I’m spilling the deets on the easy, everyday salad that I take to work for lunch almost every single day. It’s packed with nutrients from superfoods and is really tasty and satisfying.

First things first I gotta give some credit to my mom for coming up with this simple recipe. (Not sure if you can even call it that cause it’s so dang easy haha). She has taught me practically every thing I know about food… I swear her health knowledge is never-ending!

Now before I share the ingredients (most of which are from Trader Joes), I want to add that this is just the combo that I’ve been enjoying! And to be honest it really changes all the time based on what we have in the fridge. Put your own twist on this recipe when you try it! Add your own seasonings, herbs, veggies, etc. Make it yours!

Let’s Break it Down…

For the base of my salad, I start with some type of mixed greens. I usually stick to either power greens or herb salad mix (both TJ’s). I’ll also throw in their shredded cabbage.

Next, I like to add some sort of frozen veggies. Why? 1. They’re super convenient and 2. by the time I eat the salad for lunch, they’ve defrosted and are nice and soft. Recently I’ve been grabbing the organic foursome medley.

Then I add whatever fresh produce we have. For this particular salad I did green bell pepper (thin slices), some cherry tomatoes, and avocado.

And finally, it’s time for toppings! I use fresh herbs: basil, oregano, etc., this salad topper from Costco (which my mom adds raw cashews to), sundried tomatoes, cayenne pepper (great for metabolism), and salt and pepper (not pictured, oops). I’ll also add either the sprouted bean + lentil medley (which has to be cooked, instructions are on the package) or another form of protein like turkey, organic chicken thighs, or boiled eggs.

At the very end I add some sort of light dressing whether it’s a dash of apple cider vinegar, my favorite Bragg’s dressing, or just olive oil and vinegar.

And there you have it! That’s the “recipe” for my easy, everyday superfood salad. Not only is it really filling and delicious – it also leaves me feeling great when I eat it since I know every thing is so good for me. Salads are such a simple way to get a lot of the nutrients our bodies need!
